NANAMIYA SOBA LUNCH


Locally Sourced Soba
Soba is a buckwheat noodle made from the kernel of the buckwheat grain. Our buckwheat flour grain is carefully sourced from local Hakuba farmers.

Appetizers:The photographs below show meals that might be found in the early spring. (choice of):

1. Seasonal mountain vegetables with oeuf en gelée (soft-boiled egg)

2. Chawanmushi (Japanese steamed egg custard) with mozzarella cheese

3. Oyster-flavored chawanmushi (Japanese steamed egg custard) with mozzarella cheese

4. soba porridge with fried seafoods

Lunch box:

■ Japanese spinach and dried daikon radish with sesame seeds ■Tempura (shrimp,onion, and trefoil)■ Sashimi ■ Bourgnignon the oriental clam "Hamaguri"

Our chef carefully selects seasonal raw materials to produce a creative cuisine that mixes both Western and Japanese styles. These artistic dishes are the end product of three decades of knowledge, experience, and refined sensibilities developed over his a career as a head chef at a hotel. Our menu features dishes that are prepared exclusively from locally sourced and seasonal ingredients, and varies from day by day. This is improvisation in its literal sense, so tasting these exquisite dishes could be a once in a lifetime experience! The photographs below show meals that might be found in the early winter. We currently feature three full-course menus: Course A (5,500 yen) , Course B (6,500 yen)and Course C (8,500 yen). The Course A (¥5500):

■ Crusty sardine pie with shrimp and sun-dried tomatoes       ■ Chawanmushi (Japanese steamed egg custard with mozzarella cheese)  ■ Sashimi

■ Boiled turnip and eggplant               ■ Bourgnignon the oriental clam "Hamaguri" with sauté mushroom        ■ Sauté scallop and braiser fennel

■ Vegetable terrine and steamed shrimp with arlequin souce       ■ soba porridge with fried seafoods       ■ shabu-shabu (thinly sliced Kagoshima Berkshire pig in a hot broth )

■ Ochazuke                             ■ Warm chocolate with Jonathan apple sauce

 

 


 

The Course B (¥6500):

■ appetizer        ■ Chawanmushi (Japanese steamed egg custard with mozzarella cheese)  ■ Sashimi

■ Boiled turnip and eggplant               ■ Bourgnignon the oriental clam "Hamaguri" with sauté mushroom        ■ Sauté scallop and braiser fennel

■ Vegetable terrine and steamed shrimp with arlequin souce       ■ soba porridge with fried seafoods       ■ shabu-shabu (thinly sliced Japanese beef in a hot broth )

■ Ochazuke                             ■ Warm chocolate with Jonathan apple sauce


 

The Course C (¥8500):

■ Salmon tartare                          ■ consommé soup                   ■ Sashimi

 ■ Boiled turnip and eggplant               ■ Bourgnignon the oriental clam "Hamaguri" with sauté mushroom       ■ Jade eggplants.

■ Japanese parsley and dried daikon radish with sesame seeds        ■ Sauté scallop and braiser fennel           ■ Smoked duck with ratatouille

■ marinated sweet pepper               ■ vegetable and salmon terrine with smoked scallops       ■ grilled yellowtail Kyoto-style (garnished with rapeseed blossom and floral-cut carrots)

 ■ soba porridge with fried seafoods            ■ grilled Japanese beef (Shinshu sirloin)            ■ tai chazuke (green tea poured over fresh sea bream and rice)

Seating at Restaurant Nanamiya is by reservation only. If you wish to reserve a table, please call us by 3 PM on the day before your intended visit.
We accept table reservations for meals beginning between 5:00 and 7:30 PM. Tables can be reserved for approximately 2 hours.
Some ingredients may be substituted due to reasons of seasonal availability, so you may wish to confirm the current menu at the time of your call.
